Bush Tukka Cafe
Indigenous students at James Fallon High participate in running a 'Bush Tukka Cafe'. Students have shared ownership of the Senior Retail Cafe, 'Cafe J' where they actively participate in the organisation and running of their Bush Tukka Cafe.
An adjacent kitchen allows students to create products for sale. So far Bush Tukka students have made wattleseed brownies, lemon myrtle pancakes, traditional damper & wild peach chutney all of which go well with a cappucino, latte or a milkshake. Bush Tukka has continued to grow, we now have 16 students on the books. Latest project is cake decorating – using sugar paste to make eucalyptus, wattle and other bush plants. These we endeavour to put on the top of cup cakes. Bush Tukka students have continued with their catering using native jams for their scones, wattleseed brownies continue to be popular along with lemon myrtle slice. They have designed their own label, bottling their produce such as Aniseed Myrtle Fetta, Bush Tukka Dukka, Bush Marmalades and Hot Tomato Relish.
Students gain an understanding of the realities of running a small business and they gain skills and knowledge which equip them for life beyond school.
